Papasan Chorizo! It’s so good, or Menudo.

For Christmas I am doing a traditional meal.

I will have honey baked ham, green bean caserole, candied yams, mashed potatoes, corn on the cob, deviled eggs, vegetable tray, party meatballs, spicky mini franks, chips and dip, home made bread, banana nut bread, deserts (mainly apple, pumpkin, pecan pie), fudge, and cookies.

I have some wonderful holiday recipes on my website. I would love for someone to post some Mexican recipes also! I hope you find something that suits you!

well you could do quesidelas (idk how to spell, sounds like kay-sa-dee-ahs) you could do green tortillas and make the cheese red, and like a side dish :-)

So you don’t know what to cook for Christmas. Why not eat out? Now I know you’re thinking that everything will be closed but if you are prepared to travel a little, you should be OK. Assuming you live in Mexico you are 19 hours behind New Zealand. Therefore, if you want to have your Christmas lunch at say 1.00pm CST, you could have breakfast at Mexicali Fresh in Auckland, New Zealand on 26th December. Note: Before you book your flights, it is strongly recommended that you check the restaurant is open. Other suggestions are to get a friend to cook for you, freeze a McDonald’s or buy a cookbook.

Definitely tamales are a Christmas tradition for a lot of Mexicans but they are a lot of work. You can buy the masa at some Mexican bakeries and pork or beef are the more common fillings. they don’t have to be big as long as you put a good amount of meat in them with the masa. you can make a really big batch and freeze the left overs for later. Actually i think tamales taste better reheated on the grill instead of freshly cooked when they are soft. of course, you have to take off the corn leaf wrapper to reheat them.
